Tangy Italian Walleye

· Olive oil

· 1 onion, diced

· 1 can diced herbed tomatoes

· 4 walleye filets (about 7g each)

· 2 tbsp capers, drained

1. Preheat oven to 375 degrees.

2. Heat olive oil in a large pan on medium heat.

3. Add onions — cook until golden.

4. Add tomatoes and capers. Stir and reduce for about 5 minutes.

5. Add walleye to pan, and place in oven for 15 minutes or until fish is flaky and white. Check once or twice to ensure fish is cooked through.

6. Serve and enjoy!

Creamy Thai Curry Walleye

· 4 walleye filets (about 7g each)

· 1 ½ cups coconut milk

· 2 tsp grated ginger

· 2 tsp curry paste

· Chopped cilantro

1. Preheat oven to 400 degrees.

2. Heat a small pan to medium heat. Stir in coconut milk, ginger, and curry paste until smooth.

3. Poor thin layer of sauce into large baking dish. Place fish on top.

4. Bake for 20 minutes or until fish is flaky and white. Check once or twice to ensure fish is cooked through.

5. Remove from oven and top with cilantro and remaining sauce.

6. Serve and enjoy!

Crunchy Almond Walleye

· 1 cup almonds, half finely chopped, half sliced

· ¼ cup ground flour

· 4 walleye filets (about 7g each)

· ½ tsp salt

· 2 Tbsp olive oil

1. In a medium bowl, combine finely chopped almonds with flour.

2. Sprinkle salt on walleye and cover with almond/flour mixture.

3. In a large pan, heat olive oil to medium heat and cook fish for 4 minutes on each side or until golden brown. Transfer to plate.

4. Add sliced almonds to pan and cook for 1 minute or until golden brown, stirring frequently. Remove from heat and garnish on fish.

5. Serve and enjoy!

Summer Fried Walleye

· 2 eggs, lightly whisked

· 1–2 cups crushed saltine crackers

· 4 walleye filets (about 7g each)

· Oil to deep fry

· Tartar sauce

1. Pour eggs into a shallow bowl. Place saltines into another shallow bowl.

2. Coat filets first in eggs, then into saltine crumbs. Let sit while oil heats.

3. Heat oil to 375 degrees in fryer or deep sauce pan. Fry filets for 2 minutes on each side or until golden brown. Transfer to plate.

4. Serve with tartar sauce and enjoy!

*For bonus points, make your own tartar sauce!

· 1 cup mayonnaise

· ¼ cup sweet pickle relish

· 1 Tbsp finely chopped onion

· 2 Tbsp lemon juice

Buttery Garlic Parmesan Walleye

· 4 walleye filets (about 7g each)

· 2 Tbsp butter, melted

· 2 Tbsp lemon juice

· 1 tsp garlic powder

· ¼ cup Parmesan cheese, grated

1. Preheat oven to broil.

2. Combine butter, lemon juice, and garlic powder in small bowl. Brush mixture on both sides of walleye filets.

3. Place walleye bottom side up on baking pan and broil for 5 minutes. Flip fish, sprinkle with Parmesan, and broil for another 5 minutes or until flakey.

4. Serve and enjoy!
